It’s finally the kickoff to summer this weekend and Dino Bones are a great dish to impress your guests for your celebrations! You can smoke the Dino Bones in 5 steps and here’s how.
You will need un-shortened beef short ribs (about 12″ long) and a good beef rub (try our John Henry’s selections). The prep time for the ribs is 25 minutes and the cook time is 8 hours.
Keep in mind when you purchase your ribs they should come in a 3-4 bone rack.
1. Trim off excess fat, and silver skin. Slather with EVOO or mustard and rub generously.
2. Smoke at 250 degrees for 3-4 hours, then peel off the tough membrane on the bone side of the ribs.

4. Wrap in foil with some liquid for another 3-4 hours.
5. Thin down some bbq sauce with a bit of the drippings from foil and mop rips until fork tender.
